Description

Ingredients

  • 1 ½ cups finely chopped broccoli florets (or riced broccoli)
  • 1 cup sharp cheddar cheese, freshly shredded
  • 2 large eggs
  • ¼ cup almond flour or all-purpose flour
  • ¼ tsp garlic powder
  • Salt and cracked black pepper to taste
  • Olive oil cooking spray

Instructions

  1. Preheat the waffle iron on its highest setting until fully hot.
  2. In a medium bowl, whisk together eggs, flour, garlic powder, salt, and black pepper until smooth.
  3. Fold in the finely chopped broccoli and shredded cheddar cheese until fully combined.
  4. Generously spray the waffle iron with cooking spray.
  5. Scoop the mixture into the center of the waffle iron and close the lid.
  6. Cook for 5 to 6 minutes without opening the lid.
  7. Wait until steam reduces and the waffle is deeply golden and crisp.
  8. Carefully remove and serve hot with sour cream or hot sauce if desired.

Notes
