Ingredients

- 1 lb shrimp
- 1/2 cup buttermilk
- 3/4 cup cornstarch
- 1 tsp garlic powder
- 1/2 cup mayonnaise
- 3 tbsp Thai sweet chili sauce
- 1 tbsp Sriracha
- 1 tsp honey
- Oil for frying
Instructions
- Soak shrimp in buttermilk for 10 minutes.
- Coat shrimp in cornstarch and garlic powder.
- Heat oil to 190°C.
- Fry shrimp in batches until golden.
- Drain on a wire rack.
- Whisk sauce ingredients together.
- Toss shrimp in sauce.
- Garnish and serve.
Notes
Draining shrimp on a wire rack instead of paper towels keeps them crispy by preventing trapped steam.
