Description

This Masterclass Creamy Vanilla-Chocolate Ice Cream features a rich French-style vanilla custard base swirled with delicate ribbons of crackly chocolate. Luxuriously smooth, creamy, and packed with real vanilla flavor, it’s the ultimate homemade frozen dessert.


Ingredients

  • 500 ml heavy cream (minimum 30% fat)
  • 200 ml whole milk
  • 4 large egg yolks
  • 100 g granulated sugar
  • 1 whole vanilla bean, split and scraped, or 1 tbsp vanilla extract
  • 150 g high-quality dark or milk chocolate, chopped
  • 1 tbsp neutral oil (optional)

Instructions

  1. In a medium saucepan, combine the heavy cream, whole milk, and vanilla bean seeds and pod (or vanilla extract).
  2. Heat over medium heat until just simmering, then remove from heat.
  3. In a large bowl, whisk the egg yolks and sugar until pale, thick, and creamy.
  4. Slowly pour the warm dairy mixture into the yolks while whisking constantly.
  5. Return the mixture to the saucepan.
  6. Cook over low heat, stirring continuously, until the custard reaches 82°C to 84°C and coats the back of a spoon.
  7. Do not allow the mixture to boil.
  8. Strain through a fine-mesh sieve into a clean bowl.
  9. Cool completely and refrigerate for at least 2 hours.
  10. Melt the chocolate using a double boiler or microwave in short intervals.
  11. Stir in the optional neutral oil and allow the chocolate to cool to room temperature.
  12. For ice cream maker method, churn the chilled custard until it reaches a soft-serve consistency.
  13. Layer the churned ice cream and thin drizzles of melted chocolate in a freezer-safe container.
  14. Gently swirl once or twice to create a marbled effect.
  15. Freeze for 2 hours until firm.
  16. For no-churn method, place the chilled base in a metal container and freeze.
  17. Whisk vigorously every 30 minutes for 3 to 4 hours, adding drizzles of chocolate during the final mixing stages.
  18. Freeze until fully set before serving.

Notes

For the smoothest texture, chill the custard thoroughly before churning. Adding a small amount of neutral oil to the chocolate helps create delicate, crisp chocolate ribbons that melt pleasantly with each bite.
