Description

Tender golden-seared chicken cutlets simmered in a rich Tuscan garlic cream sauce with sun-dried tomatoes, Parmesan cheese, and fresh spinach. This restaurant-quality dinner is creamy, comforting, and ready in under an hour.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 700g), sliced into 4 thin cutlets
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1 tbsp unsalted butter
  • 1 small yellow onion, finely diced
  • 4 cloves garlic, finely minced
  • 120ml low-sodium chicken broth
  • 240ml heavy whipping cream
  • 75g sun-dried tomatoes, drained and sliced
  • 50g freshly grated Parmesan cheese
  • 150g fresh baby spinach

Instructions

  1. Slice the chicken breasts horizontally into thin cutlets. Pat dry and season both sides with Italian seasoning, garlic powder, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden brown and fully cooked. Transfer to a plate and loosely cover with foil.
  3. Reduce the heat to medium. Melt the butter in the same skillet, then sauté the diced onion for 3 minutes. Add the minced garlic and cook for 1 minute. Pour in the chicken broth and scrape up the browned bits from the pan. Simmer until reduced by half.
  4. Lower the heat and stir in the heavy cream and sun-dried tomatoes. Bring to a gentle simmer, then whisk in the Parmesan cheese until melted and smooth.
  5. Add the baby spinach and cook for 1 to 2 minutes until wilted.
  6. Return the chicken to the skillet and spoon the creamy Tuscan sauce over the cutlets. Simmer for 2 to 3 minutes, then serve immediately.

Notes

Bring the heavy cream to room temperature before adding it to the skillet to help prevent curdling. Freshly grated Parmesan melts more smoothly than pre-shredded cheese for the creamiest sauce.
