Description
Pumpkin Pecan Cobbler is a creamy tomato chicken pasta made with tender seared chicken, garlic, crushed tomatoes, and Parmesan tossed with pasta for an easy comforting dinner.

- 12 oz pasta
- 1 1/4 lb chicken, bite-size pieces
- 1 tablespoon olive oil
- Salt
- Black pepper
- Italian seasoning
- 1 onion, diced
- 4 to 5 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 can crushed tomatoes
- 1/2 cup broth
- 3/4 cup heavy cream
- 1/2 cup Parmesan
- Spinach (optional)
- Fresh basil (optional)
- Chili flakes (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Cook pasta according to package directions.
- Reserve 1 cup pasta water and drain.
- Season chicken with olive oil, salt, pepper, and Italian seasoning.
- Sear chicken 4 to 6 minutes until cooked through.
- Remove chicken from skillet.
- Cook onion 3 to 4 minutes until softened.
- Add garlic and cook 30 seconds.
- Stir in tomato paste and cook 1 to 2 minutes.
- Add crushed tomatoes and broth.
- Simmer 6 to 8 minutes.
- Lower heat and stir in heavy cream.
- Add pasta and chicken to sauce.
- Toss with Parmesan.
- Add pasta water a splash at a time until silky.
- Add spinach if using and cook until wilted.
- Serve hot.
Notes
Reserve pasta water to help loosen and emulsify the sauce. Add cream over low heat to prevent curdling and keep the sauce smooth.
