Description

This Masterclass Creamy Sausage One Pot Pasta combines savory Italian sausage, tender pasta, Parmesan cheese, and a rich cream sauce into one easy, comforting meal. Packed with flavor and made in a single pan, it’s perfect for busy weeknights.


Ingredients

  • 450g Italian sausage, casings removed
  • 1 tbsp extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1/2 tsp dried oregano or Italian seasoning
  • A pinch of red pepper flakes (optional)
  • 300g dried short pasta (Penne, Rigatoni, or Cavatappi)
  • 600ml low-sodium chicken stock or broth
  • 200ml heavy cream
  • 50g freshly grated Parmesan cheese
  • 2 large handfuls baby spinach (optional)
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
  2. Add the sausage and break it into small pieces with a wooden spoon.
  3. Cook until deeply browned, then remove the sausage with a slotted spoon, leaving the rendered fat in the pan.
  4. Add the diced onion and cook until softened.
  5. Stir in the garlic, oregano, and red pepper flakes, cooking for 1 minute.
  6. Add a splash of chicken stock and scrape up the browned bits from the bottom of the pan.
  7. Pour in the remaining chicken stock and add the dry pasta.
  8. Bring to a gentle boil, then reduce to a simmer.
  9. Cover and cook for 12 to 15 minutes, stirring occasionally until the pasta is tender.
  10. Return the cooked sausage to the skillet.
  11. Reduce the heat to low and stir in the heavy cream and baby spinach.
  12. Cook for 1 to 2 minutes until the spinach wilts.
  13. Remove the pan from the heat.
  14. Add the grated Parmesan cheese and stir until the sauce becomes creamy and smooth.
  15. Season with salt and freshly cracked black pepper to taste.
  16. Serve immediately with extra Parmesan if desired.

Notes

Allow the pasta to absorb most of the broth before adding the cream. Removing the pan from the heat before stirring in the Parmesan creates a silky sauce and prevents the cheese from becoming grainy.
