Description

This Green Goddess Salad is packed with crisp lettuce, broccoli, cucumber, and avocado, all tossed in a creamy herb-loaded Green Goddess dressing bursting with fresh parsley, basil, and lemon flavor.


Ingredients

  • 4 cups chopped romaine or iceberg lettuce
  • 1 cup broccoli florets
  • 1 medium cucumber, diced
  • 1 ripe avocado, cubed
  • 1 cup fresh Italian parsley
  • 1 cup fresh basil leaves
  • 1 ripe avocado, pitted
  • 2 cloves garlic
  • Juice of 1 large lemon
  • 3 tbsp olive oil
  • ¼ cup Greek yogurt or sour cream
  • Salt and black pepper to taste
  • Fresh chives or minced green onions for garnish

Instructions

  1. Add the parsley, basil, avocado, garlic, lemon juice, olive oil, and Greek yogurt to a blender or food processor.
  2. Blend until completely smooth and creamy.
  3. Add a teaspoon of water if needed to thin the dressing.
  4. Season with salt and black pepper to taste.
  5. In a large mixing bowl, combine the lettuce, broccoli, cucumber, and cubed avocado.
  6. Pour the Green Goddess dressing over the vegetables.
  7. Toss gently until everything is evenly coated.
  8. Transfer to a serving bowl.
  9. Garnish with fresh chives or green onions.
  10. Serve immediately and enjoy.

Notes

For the freshest flavor, prepare the dressing just before serving. If making ahead, store the dressing in an airtight container with plastic wrap pressed directly onto the surface to help prevent avocado oxidation.
