Ingredients

  • 1 lb pasta
  • 2 cups cooked shredded chicken
  • 1 cup cherry tomatoes
  • 1 English cucumber
  • 1/2 cup red onion
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1/2 cup fresh parsley
  • Salt
  • Pepper

Instructions

  1. Cook pasta in salted water until al dente.
  2. Toss warm pasta with a small amount of dressing.
  3. Let pasta cool to room temperature.
  4. Add chicken and vegetables.
  5. Toss with remaining dressing.
  6. Refrigerate for at least one hour.
  7. Refresh with milk or mayo if needed before serving.
