  • 3 tablespoons unsalted butter

  • 3/4 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth or vegetable broth
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons grated Parmesan (optional)
  • 2 tablespoons heavy cream (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Remove any damaged outer leaves from cabbage.
  2. Cut cabbage in half through the core.
  3. Slice into 1/2-inch ribbons or thick wedges.
  4. Heat a large skillet or Dutch oven over medium heat.
  5. Add butter and olive oil.
  6. Add sliced onions and cook 5 to 7 minutes until soft and lightly golden.
  7. Stir in garlic and cook 30 seconds.
  8. Add cabbage gradually if needed.
  9. Season with salt and pepper.
  10. Cook 8 to 10 minutes, stirring often, until cabbage begins to soften.
  11. Pour in broth and scrape the bottom to release browned bits.
  12. Cover and reduce heat to low.
  13. Cook 20 to 30 minutes, stirring every 5 to 7 minutes, until very tender.
  14. Uncover and stir in vinegar or lemon juice.
  15. Taste and adjust seasoning.
  16. Optional: stir in heavy cream and Dijon mustard.
  17. Optional: sprinkle with smoked paprika, red pepper flakes, and Parmesan before serving.
