Ingredients

- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 large egg
- Zest of 2 large lemons
- 2 tbsp fresh lemon juice
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1/2 cup granulated sugar (for rolling)
Instructions
- In a bowl, rub together granulated sugar and lemon zest until fragrant.
- Add softened butter and beat until light and fluffy.
- Mix in the egg and lemon juice until smooth.
- Gradually add flour, baking soda, cream of tartar, and salt.
- Mix until just combined.
- Chill the dough for at least 30 minutes.
- Preheat oven to 175°C (350°F).
- Scoop tablespoon-sized dough balls and roll in granulated sugar.
- Place on a baking sheet.
- Bake for 9–11 minutes until edges are set and centers remain soft.
Notes
Rubbing the lemon zest into the sugar enhances the citrus flavor. Do not overbake to maintain a soft center.
