Description

Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • Zest of 2 large lemons
  • 2 tbsp fresh lemon juice
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. In a bowl, rub together granulated sugar and lemon zest until fragrant.
  2. Add softened butter and beat until light and fluffy.
  3. Mix in the egg and lemon juice until smooth.
  4. Gradually add flour, baking soda, cream of tartar, and salt.
  5. Mix until just combined.
  6. Chill the dough for at least 30 minutes.
  7. Preheat oven to 175°C (350°F).
  8. Scoop tablespoon-sized dough balls and roll in granulated sugar.
  9. Place on a baking sheet.
  10. Bake for 9–11 minutes until edges are set and centers remain soft.

Notes

Rubbing the lemon zest into the sugar enhances the citrus flavor. Do not overbake to maintain a soft center.
