Description

Classic Spanish Gazpacho is a refreshing chilled tomato soup made with ripe tomatoes, cucumber, green pepper, garlic, olive oil, and sherry vinegar. This authentic no-cook recipe is smooth, vibrant, and perfect for hot summer days.


Ingredients

  • 2.5 lbs (1.1 kg) ultra-ripe Roma or vine-ripened tomatoes, cored and roughly chopped
  • 1 medium Italian cubanelle or green bell pepper, cored and chopped
  • 1 small English cucumber, peeled and chopped
  • 1 small garlic clove, peeled and gently crushed
  • 1/2 cup (120 ml) Spanish extra virgin olive oil
  • 2 tbsp Sherry vinegar (Vinagre de Jerez)
  • 1 slice (1 oz / 30g) stale white crustless bread, soaked in water and squeezed dry
  • 1 tsp fine sea salt, or to taste
  • Optional: Diced cucumber
  • Optional: Chopped tomatoes
  • Optional: Croutons
  • Optional: Drizzle of extra virgin olive oil

Instructions

  1. In a high-powered blender, combine the chopped tomatoes, green pepper, cucumber, garlic, soaked bread, sherry vinegar, and sea salt.
  2. Blend until completely smooth. With the blender running on medium-high speed, slowly drizzle in the olive oil until the soup becomes silky and emulsified.
  3. For an extra-smooth texture, strain the gazpacho through a fine-mesh sieve, pressing with a spatula to extract all the liquid.
  4. Transfer to a glass pitcher or covered container and refrigerate for at least 2 to 4 hours, preferably overnight. Taste and adjust the seasoning with additional salt or sherry vinegar before serving. Garnish with diced cucumber, chopped tomatoes, croutons, or a drizzle of olive oil if desired.

Notes

Use the ripest tomatoes you can find for the best flavor. Chilling the gazpacho overnight deepens the taste and creates a more refreshing soup. Serve well chilled with your favorite traditional garnishes.
