Description
Christmas crack cookies packed with buttery chocolate toffee pieces, rich brown butter, and a soft, chewy cookie center.
Ingredients
Scale
- 20 saltine crackers
- ½ cup unsalted butter
- ½ cup packed light brown sugar
- 6 oz semisweet chocolate chips
- Flaky sea salt, optional
- 1 cup unsalted butter, for browning
- 2½ cups all-purpose flour
- 1 tsp baking soda
- 1 cup packed light brown sugar
- â…“ cup granulated sugar
- 2 large eggs, room temperature
- 2 tsp pure vanilla extract
Instructions
- Preheat oven to 425°F (218°C). Line a 9×13-inch baking pan with parchment paper. Arrange the 20 saltine crackers in a single, even layer across the bottom.
- In a saucepan, melt the ½ cup butter and ½ cup light brown sugar over medium heat. Bring to a boil, then cook without stirring for 4 to 5 minutes until thickened and golden.
- Pour the hot caramel evenly over the crackers. Bake at 425°F for 4 to 5 minutes until bubbly. Remove from the oven, immediately sprinkle with the semisweet chocolate chips, let soften for 1 minute, and spread smooth. Sprinkle with optional flaky sea salt and freeze for 20 minutes until firm.
- In a saucepan, melt the 1 cup unsalted butter over medium-low heat. Stir frequently until the milk solids turn golden brown and smell nutty. Remove from heat and cool for 10 minutes.
- Whisk the cooled brown butter, 1 cup brown sugar, and â…“ cup granulated sugar together in a large bowl. Beat in the 2 eggs and vanilla extract until creamy and smooth.
- In a separate bowl, whisk 2½ cups flour and 1 teaspoon baking soda. Fold the dry ingredients into the wet mixture just until combined. Chop the frozen saltine toffee into small pieces and gently fold into the dough.
- Preheat oven to 350°F (175°C) and line sheets with parchment paper. Scoop 2-tablespoon dough balls onto sheets 2 inches apart. Bake for 10 to 12 minutes until the edges are golden. Cool.
Notes
Watch the butter closely while browning so the milk solids turn golden and nutty without burning. Freeze the saltine toffee until firm before chopping and folding it into the cookie dough.
