Description

An elegant layered dessert featuring ultra-moist chocolate sponge cake, luscious white chocolate cream filling, and a beautiful snow-white coating of white chocolate shavings and coconut.


Ingredients

  • 2¼ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee or hot water
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 3 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 cup white chocolate, finely chopped
  • ½ cup whipped cream
  • 2 cups white chocolate shavings
  • ½ cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 8-inch round cake pans.
  2. Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract and mix until smooth.
  4. Gradually stir in the hot coffee or hot water.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool completely, then slice each cake horizontally to create four layers.
  8. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks over medium heat until thickened.
  9. Remove from heat and stir in the white chocolate and vanilla extract until smooth.
  10. Cool the custard completely.
  11. Whip the heavy cream to soft peaks and fold it into the cooled white chocolate custard.
  12. Layer the cake and filling, alternating until all four layers are assembled.
  13. Frost the top and sides with whipped cream.
  14. Combine the white chocolate shavings and shredded coconut and press onto the cake.
  15. Refrigerate for at least 4 hours before serving.

Notes

For the best texture and flavor, chill the cake overnight before serving. Hot coffee enhances the chocolate flavor without overpowering the dessert.
