Ingredients

Scale
  • For the Oatmeal Cookie Matrix:
  • 1 cup (100 g) old-fashioned rolled oats
  • 1/2 cup (50 g) oat flour (or almond flour)
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 large egg, room temperature
  • 1/4 cup (60 ml) plain yogurt
  • 1 tsp pure vanilla extract
  • 1 tsp fresh lemon zest
  • 1/2 tsp fresh ginger, finely grated
  • Sugar substitute (or honey or maple syrup), to taste
  • 1/4 cup (30 g) chopped nuts (walnuts, pecans, or almonds)
  • 1/4 cup (35 g) raisins
  • For the Dark Chocolate Shell:
  • 100 g (3.5 oz) dark chocolate (60–70% cocoa), chopped

Instructions

  1. Preheat Oven and Line Baking Sheet: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper to prevent the oatmeal cookies from sticking during baking.
  2. Combine Dry Ingredients: In a large mixing bowl, combine 1 cup (100 g) of old-fashioned rolled oats, 1/2 cup (50 g) of oat flour or almond flour, 1 teaspoon of baking powder, and 1/2 teaspoon of ground cinnamon. Stir thoroughly until the dry ingredients are evenly mixed and the cinnamon and baking powder are uniformly distributed.
  3. Mix Wet Ingredients and Aromatics: In a separate medium mixing bowl, whisk together the room-temperature egg, 1/4 cup (60 ml) of plain yogurt, 1 teaspoon of pure vanilla extract, and your preferred sugar substitute, honey, or maple syrup to taste. Add 1 teaspoon of fresh lemon zest and 1/2 teaspoon of finely grated fresh ginger. Continue whisking until the mixture becomes smooth, fragrant, and well combined.
  4. Form Oatmeal Cookie Dough: Pour the prepared wet mixture into the bowl of rolled oats, oat flour, baking powder, and cinnamon. Using a rubber spatula, stir gently until a thick, cohesive oatmeal cookie dough forms. Fold in 1/4 cup (30 g) of chopped walnuts, pecans, or almonds and 1/4 cup (35 g) of raisins until they are evenly distributed throughout the dough.
  5. Rest the Dough for Fiber Hydration: Allow the oatmeal cookie dough to rest at room temperature for 5 minutes before shaping. This essential resting period allows the oat flour starches and oat fibers to absorb moisture from the yogurt and egg, naturally thickening the mixture and helping the cookies hold their shape during baking.
  6. Portion and Shape Cookie Discs: Using a cookie scoop or tablespoon, divide the rested oatmeal dough into equal portions and arrange them on the prepared parchment-lined baking sheet. With the back of a spoon or slightly damp fingers, press each portion firmly into a compact, round disc approximately 1/2 inch thick. Shape the edges neatly so the cookies bake evenly and maintain their form.
  7. Bake Until Golden and Set: Place the baking sheet in the preheated oven and bake at 350°F (175°C) for 15–20 minutes, or until the edges of the oatmeal cookies are lightly golden brown and the centers feel set to the touch. Avoid overbaking to preserve their deliciously soft, hearty, and chewy texture.
  8. Cool Cookies Completely: Remove the baking sheet from the oven and allow the baked oatmeal cookies to rest on the warm pan for 5 minutes so their delicate structure can firm up. Carefully transfer them to a wire cooling rack and let them cool completely to room temperature before adding the dark chocolate coating.
  9. Melt Dark Chocolate and Coat Cookies: Place the 100 g (3.5 oz) of chopped dark chocolate containing 60–70% cocoa into a microwave-safe bowl. Microwave in 20-second bursts, stirring thoroughly between each interval, until the chocolate is completely melted, smooth, and glossy. Using a spoon, generously spread the melted dark chocolate over the top of each completely cooled oatmeal cookie, creating an even, delicious chocolate shell.
  10. Set Chocolate Shell and Serve: Arrange the chocolate-coated oatmeal cookies on a fresh sheet of parchment paper and refrigerate for 10–15 minutes, or until the dark chocolate coating has hardened completely. Once the chocolate is firm, serve and enjoy the irresistible combination of tender oatmeal centers, crunchy nuts, chewy raisins, warm spices, and rich dark chocolate!

Notes

  • Do Not Skip the 5-Minute Rest: Allow the prepared oatmeal cookie dough to rest for 5 minutes before shaping. This gives the oat flour starches and beta-glucan fibers time to absorb moisture from the yogurt, helping the cookies hold together and preventing excessive crumbling during baking.
  • Cool Completely Before Adding Chocolate: Make sure the baked oatmeal cookies have cooled fully to room temperature before spreading the melted dark chocolate over their tops. Warm cookies can cause the chocolate to become too runny, resulting in a thin, uneven coating instead of a beautiful, smooth chocolate shell.
  • Use Old-Fashioned Rolled Oats: Choose old-fashioned rolled oats rather than quick oats. Rolled oats maintain more of their original shape during baking and provide the hearty, pleasantly chewy texture that makes these homemade oatmeal cookies so satisfying.
