Description

Soft and chewy chocolate chip cookies stuffed with a creamy cheesecake center for the ultimate bakery-style dessert experience.


Ingredients

  • 8 oz cream cheese, softened
  • â…“ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Whisk the cream cheese, powdered sugar, and vanilla extract together until smooth.
  2. Drop 24 teaspoon-sized dollops of the cheesecake mixture onto a parchment-lined tray.
  3. Freeze the cheesecake dollops for 30 minutes.
  4. Cream the butter, brown sugar, and granulated sugar together until light and fluffy.
  5. Beat in the eggs one at a time.
  6. Gradually mix in the flour and baking soda until combined.
  7. Fold in the semi-sweet chocolate chips.
  8. Scoop a portion of cookie dough and flatten it in your hand.
  9. Place a frozen cheesecake dollop in the center and wrap the dough around it into a sealed ball.
  10. Arrange the cookie dough balls on a baking sheet.
  11. Bake at 175°C (350°F) for 11 to 13 minutes until the edges are lightly golden.
  12. Allow the cookies to cool completely before serving.

Notes

Freezing the cheesecake filling makes assembling the cookies much easier. Avoid overbaking to keep the centers soft and creamy.
