Description
A rustic French-inspired chicken casserole featuring golden-seared chicken, tender potatoes, mushrooms, and leeks simmered in a rich white wine and cream sauce.

- 4 chicken thighs or 1 whole chicken cut into pieces
- Salt, to taste
- Black pepper, to taste
- 2 tbsp all-purpose flour
- 2 tbsp extra virgin olive oil
- 1 knob unsalted butter
- 250g button mushrooms, quartered
- 1 yellow onion, sliced
- 2 garlic cloves, minced
- 1 leek, white part only, finely sliced
- 500g new potatoes, washed and halved
- 1 dried bay leaf
- 2 sprigs fresh thyme or ½ tsp dried thyme
- 1 sprig fresh rosemary, optional
- Fresh Italian parsley, chopped
- 150ml dry white wine
- 400ml chicken stock
- 150ml double cream, heavy cream, or crème fraîche
- 1 tsp Dijon mustard, optional
Instructions
- Season the chicken pieces with salt and black pepper.
- Lightly coat the chicken with flour, shaking off the excess.
- Heat the olive oil and butter in a Dutch oven over medium-high heat.
- Sear the chicken for about 5 minutes per side until golden brown.
- Transfer the chicken to a plate.
- Add the onion, garlic, and leek to the same pot and sauté for 5 minutes.
- Add the mushrooms and potatoes and cook for another 5 minutes.
- Season with thyme, bay leaf, rosemary, salt, and pepper.
- Return the chicken to the Dutch oven.
- Pour in the white wine and simmer for 2 to 3 minutes while scraping the bottom of the pot.
- Add the chicken stock until the ingredients are mostly covered.
- Cover and simmer on low heat for 45 minutes or bake covered at 350°F (180°C).
- Remove the lid and stir in the cream and Dijon mustard if using.
- Simmer uncovered for 10 to 15 minutes until the sauce thickens.
- Garnish with fresh parsley and serve hot.
Notes
For the most authentic flavor, use a dry white wine and fresh herbs. Crusty French bread makes the perfect accompaniment for soaking up the creamy sauce.
