Ingredients

  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup julienned carrots
  • 1 red bell pepper, finely sliced
  • 2 cups shredded cooked chicken breast, chilled
  • 1 cup whole roasted cashews, unsalted
  • 3 green onions, thinly sliced
  • 3 tbsp creamy peanut butter or cashew butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp raw honey
  • 1 tbsp fresh lime juice
  • 1 tsp freshly grated ginger

Instructions

  1. In a small bowl or jar, combine the peanut butter, soy sauce, sesame oil, honey, lime juice, and grated ginger.
  2. Whisk vigorously for 1 to 2 minutes until smooth and creamy.
  3. In a large salad bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, and shredded chicken.
  4. Toss the ingredients until evenly distributed.
  5. Pour the sesame-ginger dressing over the salad mixture.
  6. Fold and toss thoroughly for 1 minute to coat all ingredients evenly.
  7. Add the roasted cashews and sliced green onions.
  8. Give the salad one final toss.
  9. Serve immediately while cold and crunchy.

Notes

For maximum crunch, add the cashews just before serving. This salad is excellent for meal prep, but keep the dressing separate until ready to eat.
