- 2 cups all-purpose flour
- 1 cup shredded coconut (sweetened or unsweetened)
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup butter (softened)
- 1 cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- Chocolate chips (optional)
- Chopped nuts (optional)
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray.
- In a bowl, combine flour, shredded coconut, baking soda, and salt.
- In another bowl, beat butter, sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until smooth.
- Gradually add dry ingredients into the wet mixture and mix well.
- Scoop dough onto the prepared baking tray.
- Bake for 10–12 minutes until edges are golden.
- Allow cookies to cool to set their chewy texture.
Notes
Do not overbake to keep the cookies soft and chewy in the center.
