Description

Soft and chewy coconut cookies with a rich buttery flavor and perfectly golden edges, loaded with coconut goodness in every bite.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup shredded coconut (sweetened or unsweetened)
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup butter (softened)
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • Chocolate chips (optional)
  • Chopped nuts (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking tray.
  2. In a bowl, combine flour, shredded coconut, baking soda, and salt.
  3. In another bowl, beat butter, sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla extract, mixing until smooth.
  5. Gradually add dry ingredients into the wet mixture and mix well.
  6. Scoop dough onto the prepared baking tray.
  7. Bake for 10–12 minutes until edges are golden.
  8. Allow cookies to cool to set their chewy texture.

Notes

Do not overbake to keep the cookies soft and chewy in the center.
