- ¾ cup (120g) soft caramel bits or chopped soft caramels
- ½ cup (115g) unsalted butter, softened to room temperature
- ½ cup (100g) packed dark brown sugar
- ¼ cup (50g) granulated white sugar
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1 ½ cups (190g) all-purpose flour
- ½ tsp baking soda
- ¼ tsp fine sea salt
- ½ tsp ground nutmeg
Instructions
- Sauté the Diced Apples: Melt 1 tablespoon of butter in a small skillet over medium heat. Add the diced Granny Smith apples and 1 teaspoon of cinnamon. Sauté for 3 to 5 minutes until slightly softened and moisture has evaporated. Transfer to a paper towel-lined plate to cool completely.
- Cream Butter and Sugars: In a large bowl, beat the softened butter, dark brown sugar, and granulated white sugar together until light and fluffy. Beat in the egg and vanilla extract until smooth.
- Combine Dry Ingredients and Fold Mix-Ins: Whisk together the all-purpose flour, baking soda, salt, and nutmeg. Fold the dry mixture into the wet ingredients until just combined. Gently fold in the cooled sautéed apples and caramel bits.
- Chill the Dough: Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes. This prevents the cookies from spreading too thin and keeps the caramel encapsulated.
- Bake and Cool: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop 2-tablespoon portions of dough onto the sheet, spacing them 2 inches apart. Bake for 12 to 14 minutes until the edges are golden brown. Let rest on the baking sheet for 10 minutes before serving.

Chilling the dough helps prevent the cookies from spreading too thin and keeps the caramel encapsulated. Let the cookies rest on the baking sheet for 10 minutes after baking.
