Description

Soft, fluffy buns stuffed with creamy, spicy dynamite chicken — a perfect fusion of heat, cheese, and comfort in every bite!


Ingredients

  • 3 cups all-purpose flour
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • ¾ cup warm milk (100°F / 38°C)
  • 1 egg
  • 2 tablespoons butter, softened
  • 1 tablespoon oil (for kneading)
  • 1 tablespoon oil (for filling)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb (450 g) boneless chicken breast, finely diced or shredded
  • 1 tablespoon sambal oelek (or chili paste substitute)
  • 2 tablespoons mayonnaise
  • 1 tablespoon cream cheese
  • ½ cup shredded mozzarella
  • Salt & pepper to taste
  • 1 egg yolk (for egg wash)
  • 1 tablespoon milk
  • Extra cheese and parsley flakes for garnish

Instructions

  1. In a large bowl, mix warm milk, sugar, and yeast. Let sit 5 minutes until foamy.
  2. Add egg, softened butter, and salt; mix well. Gradually add flour, kneading until a soft dough forms. Add oil and knead 8–10 minutes until smooth and elastic. Cover and let rise 1 hour or until doubled.
  3. Heat oil in a pan over medium heat. Add onion and garlic; sauté until fragrant. Add diced chicken and cook until golden and tender. Stir in sambal oelek, mayo, and cream cheese. Add salt, pepper, and mozzarella; stir until creamy. Let cool before filling.
  4. Punch down the risen dough and divide into 8–10 pieces. Flatten each piece into a circle. Add 1 heaping tablespoon of chicken filling in the center. Pinch edges to seal and shape into a bun. Place seam-side down on a parchment-lined baking sheet.
  5. Cover buns and let rest 20 minutes. Mix egg yolk with milk for egg wash; brush over each bun. Sprinkle with shredded cheese and parsley flakes. Bake at 375°F (190°C) for 18–20 minutes, until golden brown.
  6. Serve warm — each bite delivers creamy, spicy, cheesy perfection! These buns pair beautifully with iced coffee, soup, or a fresh salad.

Notes

For an extra spicy kick, increase the sambal oelek or add chili flakes. You can also replace chicken with tuna, shrimp, or mushrooms for a tasty variation.
