Ingredients

- 2 lbs beef chuck roast
- 6 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 garlic cloves
- 1 tbsp cumin
- 1 tsp dried oregano
- 4 cups beef broth
- Salt and pepper to taste
- Corn tortillas
- Chopped onions and cilantro for garnish
- Lime wedges for serving
Instructions
- Remove stems and seeds from chiles, boil until soft, then blend with onion, garlic, cumin, and oregano.
- Season beef with salt and pepper, then sear in a pot until browned.
- Add blended chile mixture and beef broth, simmer on low for 3 hours until meat is tender.
- Shred beef and dip corn tortillas in the broth before frying on a skillet.
- Fill tortillas with shredded birria, garnish with onions, cilantro, and lime.
Notes
For extra flavor, serve with a small bowl of the birria broth for dipping.
