Description

Cast Iron Skillet Peach Cobbler is a classic Southern dessert featuring juicy cinnamon-spiced peaches baked beneath a buttery golden crust. Made in a cast iron skillet for crisp edges and tender fruit, it’s best served warm with a scoop of vanilla ice cream.

Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (or frozen/canned peaches, well-drained)
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Place the butter in a 10-inch or 12-inch cast iron skillet and melt it in the oven as it preheats. Carefully remove the hot skillet once the butter is melted.
  2. In a medium bowl, combine the sliced peaches, 1/2 cup granulated sugar, cinnamon, nutmeg, and lemon juice. Toss well and let the peaches rest for a few minutes to release their juices.
  3. In a separate bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt. Stir in the milk and vanilla extract until the batter is smooth.
  4. Pour the batter evenly over the melted butter in the hot skillet without stirring. Spoon the peach mixture and all of its juices evenly over the batter without stirring.
  5. Bake for 45 to 50 minutes until the crust is deeply golden brown and the peaches are bubbling around the edges. Cool for 10 to 15 minutes before serving warm with vanilla ice cream if desired.

Notes

Do not stir the layers after adding the batter and peaches—this creates the cobbler’s signature crust as it bakes. Fresh ripe peaches provide the best flavor, but well-drained frozen or canned peaches work well year-round.
