- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 2 medium apples, peeled and diced
- 1 Tbsp lemon juice
- 2 Tbsp brown sugar
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ½ cup all-purpose flour
- ½ cup old-fashioned oats
- ⅓ cup brown sugar
- ¼ cup cold butter, cubed
- Pinch of salt
- ½ cup soft caramels or caramel sauce
- 1 Tbsp heavy cream
Instructions
- Preheat oven to 350°F (177°C). Line a 9×9-inch baking pan with parchment paper. Mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press mixture firmly into the bottom of the pan and bake for 8 minutes. Let cool slightly.
- In a large bowl, beat cream cheese, granulated sugar, brown sugar, and vanilla until smooth and creamy. Add eggs one at a time, mixing on low speed. Blend in sour cream until fully incorporated. Pour the cheesecake mixture over the cooled crust and smooth the top evenly.
- In a separate bowl, toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Spoon the apple mixture evenly over the cheesecake layer.
- To make the streusel, combine flour, oats, brown sugar, cold butter, and a pinch of salt. Mix with your fingers or a fork until coarse crumbs form. Sprinkle the streusel evenly over the apple layer.
- Bake for 35–40 minutes, or until the center is set and the edges are golden. Allow to cool completely at room temperature, then refrigerate for at least 3 hours before slicing.
- Before serving, melt caramels with heavy cream in a microwave-safe bowl, stirring until smooth. Drizzle the warm caramel over the chilled cheesecake bars and enjoy!
Notes
For extra flavor, use tart apples like Granny Smith or Honeycrisp. These bars taste even better the next day after chilling overnight!
