- 24 cherry or grape tomatoes
- 24 fresh mozzarella pearls (ciliegine or bocconcini)
- 24 fresh basil leaves
- 1 tbsp high-quality extra virgin olive oil
- 1/4 tsp fine sea salt
- 1/4 tsp freshly cracked black pepper
- 24 small wooden toothpicks or 4-inch bamboo skewers
- 1/2 cup (120ml) balsamic vinegar of Modena
- 1 tsp honey or brown sugar (optional)
Instructions
- In a small saucepan, combine the balsamic vinegar and honey if using. Bring to a gentle simmer over medium heat, then reduce to low and cook for 8 to 10 minutes until reduced by half and thick enough to coat the back of a spoon. Let cool completely.
- In a small bowl, toss the mozzarella pearls with the extra virgin olive oil, sea salt, and freshly cracked black pepper.
- Assemble each skewer by threading one cherry tomato, one folded basil leaf, and one seasoned mozzarella pearl.
- Arrange the skewers on a serving platter and drizzle generously with the cooled balsamic glaze just before serving.
Notes
Use the freshest basil and ripe tomatoes for the best flavor. Allow the balsamic glaze to cool completely before drizzling, as it thickens while cooling. Assemble shortly before serving to keep the basil vibrant and fresh.
