Ingredients

Scale
  • For the Soft Ricotta Cookie Dough:
  • 1 cup (120 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (120 g) whole-milk ricotta cheese, well-drained
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp finely grated fresh lemon zest
  • 1/2 cup (85 g) mini chocolate chips, divided (reserve 2 tbsp for the drizzle)
  • 1/2 cup (60 g) chopped pistachios, toasted
  • For the Finishing Touches:
  • 2 tbsp mini chocolate chips, reserved from the 1/2 cup above, melted for drizzling
  • 2 tbsp powdered sugar, sifted, for dusting

Instructions

  1. Drain the Whole-Milk Ricotta Cheese: Place 1/2 cup (120 g) of whole-milk ricotta cheese in a fine-mesh sieve lined with cheesecloth or paper towels. Allow it to drain for 15–20 minutes, pressing gently to remove excess whey. Thorough draining is essential for creating a thick cookie dough that holds its shape and bakes into beautifully soft, cake-like cookies rather than spreading thinly.
  2. Combine the Ricotta, Sugar, Egg, and Aromatics: In a large mixing bowl, combine the thoroughly drained ricotta cheese, 1/2 cup (100 g) of granulated sugar, 1 large room-temperature egg, 1 teaspoon of pure vanilla extract, and 1 teaspoon of finely grated fresh lemon zest. Whisk thoroughly until the mixture becomes smooth, glossy, creamy, and evenly combined. The fresh lemon zest should be distributed throughout the ricotta base for a delicate citrus aroma.
  3. Incorporate the All-Purpose Flour: Gradually add 1 cup (120 g) of all-purpose flour to the prepared ricotta mixture. Using a rubber spatula, gently fold the flour into the wet ingredients just until no dry streaks remain and a soft, slightly sticky cookie dough forms. Avoid overmixing to preserve the wonderfully tender, delicate texture of the finished ricotta cookies.
  4. Fold in Mini Chocolate Chips and Toasted Pistachios: Measure 1/2 cup (85 g) of mini chocolate chips and reserve 2 tablespoons for the decorative chocolate drizzle. Add the remaining mini chocolate chips and 1/2 cup (60 g) of toasted chopped pistachios to the cookie dough. Using a rubber spatula, gently fold the chocolate chips and pistachios into the mixture until evenly distributed, ensuring every cookie contains delicious chocolate pieces and crunchy nuts.
  5. Chill the Ricotta Cookie Dough: Cover the mixing bowl tightly with plastic wrap and refrigerate the prepared ricotta cookie dough for 45 minutes. This important chilling period firms up the moisture-rich dough, making it easier to scoop into uniform portions while helping the cookies maintain their thick, soft, cake-like shape during baking.
  6. Preheat Oven and Portion the Cookie Dough: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. Remove the chilled ricotta cookie dough from the refrigerator. Using a small cookie scoop or tablespoon, divide the dough into rounded tablespoon portions, approximately 25 g each. Arrange the portions on the prepared baking sheets, leaving about 2 inches of space between each cookie to allow for even heat circulation and gentle spreading.
  7. Bake Until Lightly Golden and Set: Place the baking sheets in the preheated oven and bake at 350°F (175°C) for 12–15 minutes, or until the bottom edges become lightly golden and the centers appear set and slightly springy when gently touched. The tops should remain relatively pale, while the interiors retain their wonderfully soft and moist texture. Avoid overbaking to prevent the delicate ricotta cookies from becoming dry.
  8. Cool, Drizzle with Chocolate, and Serve: Remove the baking sheets from the oven and allow the cookies to rest on the warm pans for 5 minutes to firm up slightly. Carefully transfer them to a wire cooling rack and let them cool completely. Melt the reserved 2 tablespoons of mini chocolate chips in a microwave-safe bowl using short intervals, stirring until smooth. Drizzle the melted chocolate decoratively over the cooled ricotta cookies. Using a fine-mesh sieve, lightly dust the cookies with 2 tablespoons of sifted powdered sugar. Allow the chocolate drizzle to set before serving, then enjoy their wonderfully soft, cake-like centers, fragrant lemon zest, creamy chocolate sweetness, and delightful toasted pistachio crunch!

Notes

  • Drain the Ricotta Thoroughly: Excess moisture in ricotta cheese is one of the main causes of thin, overly soft cookie dough that spreads excessively during baking. Allow the ricotta to drain in a cheesecloth-lined fine-mesh sieve for 15–20 minutes, gently pressing out excess whey. Well-drained ricotta helps create beautifully thick cookies with tender, cake-like centers.
  • Choose Whole-Milk Ricotta Cheese: Use full-fat whole-milk ricotta for the best flavor, rich texture, and creamy consistency. Part-skim ricotta generally contains less fat and may have a different moisture balance, which can affect the softness and structure of the finished cookies.
  • Keep the Dough Chilled Between Batches: Refrigerate the ricotta cookie dough for the full 45 minutes before baking. If baking in multiple batches, keep any unused dough in the refrigerator while waiting for baking sheet space. Chilled dough is easier to scoop and helps prevent excessive spreading in the oven.
