- 1 lb sirloin or New York strip steak (cut into 1-inch bite-sized tips)
- 1 1/2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1/2 tsp brown sugar
- 8 oz rigatoni pasta
- 2 tbsp butter
- 3 cloves garlic (minced)
- 3/4 cup heavy cream
- 1/2 cup chicken broth
- 1 cup Parmigiano-Reggiano cheese (freshly grated)
- 1 tbsp vegetable oil or ghee
- Fresh parsley for garnish
Instructions
- Cook the rigatoni in salted boiling water until al dente.
- Reserve 1 cup of pasta water before draining the pasta.
- Pat the steak tips dry and toss with Cajun seasoning, garlic powder, and brown sugar.
- Heat oil in a cast-iron skillet over high heat until smoking hot.
- Sear the steak tips undisturbed for 2 minutes, flip, and cook 1 more minute.
- Remove steak tips from the skillet and set aside.
- Reduce heat to medium-low and melt butter in the same skillet.
- Sauté minced garlic for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, then simmer gently for 3 minutes.
- Reduce heat to low and whisk in Parmesan cheese gradually until smooth.
- Add the cooked rigatoni and a splash of pasta water to the sauce, tossing until glossy.
- Top with Cajun steak tips and garnish with fresh parsley before serving.
Notes
Use freshly grated Parmigiano-Reggiano for the smoothest sauce and avoid overcooking the steak to keep it juicy and tender.
