Description

Soft, chewy cookies filled with a gooey brown sugar cinnamon center and topped with a sweet vanilla glaze — these Cinnamon Brown Sugar Pop Tart Cookies taste just like your favorite breakfast treat, but in cookie form!


Ingredients

  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup brown sugar (for filling)
  • 1 ½ tsp ground cinnamon (for filling)
  • 1 Tbsp melted butter (for filling)
  • 1 tsp flour (for filling)
  • 1 cup powdered sugar (for glaze)
  • 1 Tbsp milk (for glaze)
  • ½ tsp vanilla extract (for glaze)
  • Pinch of cinnamon (for glaze)

Instructions

  1. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes). Add eggs one at a time, then mix in vanilla extract. Gradually mix in dry ingredients until just combined. Chill dough for 30 minutes before assembling.
  2. In a small bowl, mix brown sugar, cinnamon, melted butter, and flour until crumbly and thick — it should resemble Pop Tart filling.
  3. Scoop about 2 tablespoons of cookie dough and flatten slightly. Add 1 teaspoon of filling to the center, then top with another small piece of dough and seal edges gently. Place on a parchment-lined baking sheet.
  4. Preheat oven to 350°F (177°C). Bake cookies for 10–12 minutes, until edges are golden and centers remain soft. Allow to cool completely before glazing.
  5. Whisk powdered sugar, milk, vanilla, and cinnamon together until smooth. Drizzle glaze over cooled cookies in zig-zag Pop Tart style. Let set for 15 minutes before serving.

Notes

Store cookies in an airtight container at room temperature for up to 4 days. For extra flavor, warm them for 10 seconds in the microwave before enjoying!
