- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- ½ cup brown sugar (for filling)
- 1 ½ tsp ground cinnamon (for filling)
- 1 Tbsp melted butter (for filling)
- 1 tsp flour (for filling)
- 1 cup powdered sugar (for glaze)
- 1 Tbsp milk (for glaze)
- ½ tsp vanilla extract (for glaze)
- Pinch of cinnamon (for glaze)
Instructions
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes). Add eggs one at a time, then mix in vanilla extract. Gradually mix in dry ingredients until just combined. Chill dough for 30 minutes before assembling.
- In a small bowl, mix brown sugar, cinnamon, melted butter, and flour until crumbly and thick — it should resemble Pop Tart filling.
- Scoop about 2 tablespoons of cookie dough and flatten slightly. Add 1 teaspoon of filling to the center, then top with another small piece of dough and seal edges gently. Place on a parchment-lined baking sheet.
- Preheat oven to 350°F (177°C). Bake cookies for 10–12 minutes, until edges are golden and centers remain soft. Allow to cool completely before glazing.
- Whisk powdered sugar, milk, vanilla, and cinnamon together until smooth. Drizzle glaze over cooled cookies in zig-zag Pop Tart style. Let set for 15 minutes before serving.
Notes
Store cookies in an airtight container at room temperature for up to 4 days. For extra flavor, warm them for 10 seconds in the microwave before enjoying!
