Boat Dip, also known as Rotel Ranch Dip, is a creamy, cheesy, no-cook party dip made with sour cream, Fiesta Ranch seasoning, Rotel tomatoes, and sharp cheddar. It’s quick to mix, full of flavor, and perfect for chips, crackers, or fresh vegetables.

- 1 (16-ounce) container sour cream
- 1 (1-ounce) packet Fiesta Ranch dip mix
- 1 (10-ounce) can Rotel diced tomatoes and green chilies, drained
- 2 cups shredded sharp cheddar cheese
- 2 tablespoons chopped cilantro or green onions (optional)
- 1 teaspoon lime juice (optional)
Instructions
- In a large bowl, stir together the sour cream and Fiesta Ranch dip mix until smooth.
- Fold in the drained Rotel diced tomatoes and green chilies.
- Add the shredded sharp cheddar cheese and mix well.
- Stir in chopped cilantro or green onions and lime juice if using.
- Mix until everything is evenly combined.
- Cover and chill in the refrigerator for at least 30 minutes.
- Stir once more before serving.
- Serve cold with tortilla chips, crackers, or fresh vegetables.
Notes
Draining the Rotel well helps keep the dip thick and creamy. This dip can be made several hours ahead and stored in the refrigerator until ready to serve.
