- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup milk
- 1/3 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp sour cream
- 1/2 cup ketchup (for glaze)
- 2 tbsp brown sugar
- 1 tbsp mustard
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and sour cream.
- Mix gently until just combined.
- Form the mixture into a loaf shape and place in a baking dish.
- In a small bowl, mix ketchup, brown sugar, and mustard.
- Spread half of the glaze over the meatloaf.
- Bake for 40 minutes.
- Remove from oven and spread remaining glaze on top.
- Return to oven and bake for another 15-20 minutes.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Do not overmix the meat mixture to keep the meatloaf tender and juicy. Letting it rest before slicing helps retain moisture.
