Description

An ultra-moist velvet chocolate layer cake made with hot coffee and layered with rich fudge buttercream frosting.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • ¾ cup (75g) Dutch-process cocoa powder
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp fine sea salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) real buttermilk
  • ½ cup neutral vegetable oil
  • 1 tbsp pure vanilla bean paste
  • 1 cup (240ml) freshly brewed hot black coffee
  • 1 cup (225g) unsalted butter, softened
  • 3½ cups (440g) powdered sugar
  • ½ cup unsweetened cocoa powder
  • â…“ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  3. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and sea salt.
  4. Add eggs, buttermilk, vegetable oil, and vanilla bean paste to the dry ingredients.
  5. Beat on medium speed for 2 minutes until smooth.
  6. Slowly stream in the hot coffee while mixing on low speed.
  7. Divide the thin batter evenly between the prepared cake pans.
  8. Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  9. Cool the cakes in the pans for 15 minutes before transferring to a wire rack to cool completely.
  10. In a clean bowl, beat softened butter until pale and creamy.
  11. Sift in powdered sugar and cocoa powder alternately with heavy cream.
  12. Add vanilla extract and whip on high speed for 3 to 4 minutes until fluffy.
  13. Place one cake layer on a serving plate.
  14. Spread an even layer of fudge buttercream over the cake.
  15. Top with the second cake layer.
  16. Frost the top and sides smoothly with the remaining buttercream.
  17. Slice and serve.

Notes

Hot coffee intensifies the chocolate flavor while keeping the cake exceptionally moist. Be careful not to overbake to maintain the soft velvet texture.
