Description

A rich and creamy Basque cheesecake baked in a loaf pan, with a deeply caramelized dark golden top and an irresistibly soft, jiggly center.


Ingredients

  • 12 oz (340g / 1.5 blocks) full-fat brick cream cheese, softened to room temperature
  • 1/2 cup (100g) superfine or granulated white sugar
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) heavy whipping cream (minimum 36% milk fat), room temperature
  • 1.5 tbsp (12g) cornstarch or all-purpose flour
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Press two overlapping sheets of parchment paper into a standard 8.5×4.5 or 9×5 inch loaf pan, letting the paper overhang the edges by 2 inches.
  3. Crumple the parchment into a ball first, then unwrap it so it fits smoothly into the tight corners of the loaf pan.
  4. Beat the softened cream cheese and granulated sugar for 2 minutes until completely smooth, glossy, and free of lumps.
  5. Scrape down the sides of the bowl.
  6. Add the eggs one at a time, mixing on low speed until just blended.
  7. Pour in the heavy whipping cream, vanilla extract, and sea salt, whisking gently to avoid incorporating excess air bubbles.
  8. Sift the cornstarch or flour over the batter and fold it in with a rubber spatula until smooth.
  9. Pour the batter into the prepared parchment-lined loaf pan.
  10. Tap the pan twice on the counter to pop surface air bubbles.
  11. Bake at 425°F (220°C) for 28 to 32 minutes, until the top is deeply caramelized and dark golden brown while the center still jiggles.
  12. Let the cheesecake cool before serving.

Notes

Use room-temperature ingredients for a smooth, lump-free batter. Avoid overmixing after adding the eggs and cream to keep excess air out of the cheesecake.
