Description
Cinnamon Roll French Toast Bites are a quick, cozy breakfast made with soft cinnamon rolls dipped in a vanilla-cinnamon custard and cooked until golden and crispy. Finished with sweet icing drizzle, they taste like bakery-style French toast in bite-sized form.

- 1 can cinnamon rolls (with icing) OR 6–7 cups bread cubes
- 2 eggs
- ½ cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Pinch of salt
- 2 tablespoons butter
- Optional: 1 tablespoon oil (helps prevent burning)
Instructions
- Cut cinnamon rolls into 6–8 bite-size pieces each. If using bread, cube it into similar sizes.
- In a bowl, whisk together eggs, milk, vanilla, cinnamon, and salt until smooth.
- Quickly dip each piece into the custard for about 5–8 seconds. Let excess drip off.
- Heat butter (and optional oil) in a skillet over medium heat.
- Cook the dipped pieces for 2–3 minutes per side until golden brown and slightly crisp.
- For the oven method: Arrange dipped pieces on a lined baking sheet and bake at 425°F for 10 minutes. Flip and bake another 6–8 minutes until golden.
- Warm the icing from the cinnamon roll package and drizzle over the bites before serving.
Notes
Serve with maple syrup, powdered sugar, or fresh berries for extra flavor. Slightly stale bread works best if you’re making the bread cube version because it absorbs the custard better.
