Description

A delicious gluten-free baked stuffed shrimp casserole layered with jumbo shrimp and savory crabmeat stuffing, finished with buttery gluten-free crackers and a golden paprika crust.


Ingredients

  • 1.5 lbs (680g) raw jumbo shrimp (16–20 count), peeled and deveined, tails on or off
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp sea salt
  • 1.5 cups (150g) gluten-free buttery crackers, finely crushed
  • 6 tbsp (85g) unsalted butter, divided
  • 8 oz (225g) lump crabmeat, drained and picked for shell fragments
  • 2 cloves garlic, finely minced
  • 2 tbsp shallots, finely diced
  • 2 tbsp fresh flat-leaf parsley, finely chopped
  • 1 tbsp fresh lemon juice + 1 tsp lemon zest
  • 1/4 cup (60ml) gluten-free chicken or seafood stock
  • 1/4 tsp paprika, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease an 8×11-inch or 9×13-inch baking dish with butter.
  3. Arrange the raw jumbo shrimp in a single layer along the bottom of the dish.
  4. Drizzle the shrimp with 1 tbsp lemon juice and sprinkle with Old Bay seasoning and sea salt.
  5. Melt 4 tbsp butter in a skillet over medium heat.
  6. Add the diced shallots and minced garlic and sauté for 2 minutes until soft and fragrant.
  7. Fold in the lump crabmeat, lemon zest, and lemon juice, heating gently for 1 minute.
  8. Remove the skillet from the heat.
  9. Stir in the crushed gluten-free crackers, chopped parsley, and gluten-free stock until the crumbs are evenly moistened and hold together when pressed.
  10. Spoon the crab-and-cracker stuffing evenly over the shrimp, pressing down lightly to form a continuous crust.
  11. Melt the remaining 2 tbsp butter and drizzle it over the stuffing.
  12. Dust the top with paprika.
  13. Bake at 375°F (190°C) for 15 to 18 minutes until the shrimp are pink and opaque and reach an internal temperature of 145°F (63°C).
  14. Serve warm.

Notes

Use gluten-free crackers and gluten-free chicken or seafood stock to keep the casserole gluten-free. Avoid overbaking the shrimp so they remain tender and juicy.
