Description

A creamy and savory antipasto-inspired cheese log packed with salami, sun-dried tomatoes, artichokes, roasted red peppers, olives, herbs, and toasted nuts.


Ingredients

  • 16 oz (450g / 2 blocks) full-fat cream cheese, softened to room temperature
  • 1/2 cup (60g) shredded mozzarella or provolone cheese
  • 1/4 cup (30g) freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp black pepper
  • 1/3 cup genoa salami or prosciutto, finely diced
  • 1/3 cup sun-dried tomatoes in oil, thoroughly drained and finely chopped
  • 1/3 cup marinated artichoke hearts, drained, patted dry, and finely chopped
  • 1/4 cup roasted red peppers, drained, patted dry, and diced
  • 1/4 cup kalamata or black olives, pitted and chopped
  • 1/4 cup fresh basil and parsley, finely chopped
  • 1/4 cup toasted pine nuts or chopped walnuts, optional

Instructions

  1. Chop the salami, sun-dried tomatoes, artichoke hearts, roasted red peppers, and olives.
  2. Lay the chopped vegetables between paper towels and press firmly to remove all surface moisture.
  3. In a large bowl, beat the softened cream cheese, shredded mozzarella, Parmesan, garlic powder, Italian seasoning, red pepper flakes, and black pepper until smooth and uniform.
  4. Gently fold the dried salami, sun-dried tomatoes, artichokes, red peppers, and olives into the cream cheese mixture until evenly distributed.
  5. Spoon the cheese mixture onto a large piece of plastic wrap and use the plastic wrap to form and roll the cheese into a tight 8-inch log.
  6. Roll the cheese log in fresh chopped basil, parsley, and toasted pine nuts until fully coated.
  7. Wrap tightly in plastic wrap and refrigerate for at least 2 hours or overnight until firm.
  8. Serve cold alongside artisan crackers, crostini, or sliced baguette.

Notes

Thoroughly drain and pat dry the antipasto ingredients before mixing to help the cheese log stay firm. Chill for at least 2 hours, or overnight for the best texture.
