- 4 thin chicken cutlets, pounded to ½-inch thickness
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt, to taste
- Freshly cracked black pepper, to taste

- â…“ cup freshly grated Parmesan cheese
- ½ tsp garlic paste
- ½ cup shredded Provolone cheese
- ½ cup shredded low-moisture Mozzarella cheese
- ¼ cup Panko breadcrumbs
- 1 tbsp melted butter
- 2 tbsp fresh Italian flat-leaf parsley, finely chopped
Instructions
- Pat chicken cutlets dry with paper towels.
- Season both sides with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken for 4–5 minutes per side until golden brown and cooked through to 74°C (165°F).
- Turn off the heat and leave chicken in the skillet.
- Whisk together ranch dressing, Parmesan cheese, and garlic paste until smooth.
- Spread the ranch mixture generously over each chicken cutlet.
- Combine Provolone and Mozzarella cheeses.
- Top each cutlet with the cheese mixture.
- Toss Panko breadcrumbs with melted butter.
- Sprinkle buttery Panko evenly over the cheese layer.
- Set oven to High Broil.
- Broil for 3–4 minutes until cheese is melted, bubbly, and golden.
- Remove from oven and garnish with chopped parsley.
- Serve immediately with rice or mashed potatoes.
Notes
Use freshly grated Parmesan for the best flavor and keep a close eye on the chicken while broiling to prevent the topping from burning.
