Description

Pumpkin Pecan Cobbler is a fresh and vibrant homemade salsa made with ripe tomatoes, jalapeños, garlic, cilantro, and lime for the perfect scoopable texture.


Ingredients

  • 1 1/2 lbs ripe tomatoes (Roma preferred)
  • 1/2 medium onion
  • 1 to 2 jalapeños (optional serrano)
  • 2 garlic cloves
  • 1/2 cup fresh cilantro
  • 2 tablespoons lime juice
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon cumin (optional)
  • 1 to 2 teaspoons sugar (optional)

Instructions

  1. Chop tomatoes and drain 10 minutes if very juicy.
  2. Add onion, jalapeños, garlic, and cilantro to a food processor.
  3. Pulse until finely chopped.
  4. Add chopped tomatoes and pulse until mixture is scoopable.
  5. Transfer to a bowl and stir in lime juice and kosher salt.
  6. Add cumin or sugar if using and adjust seasoning to taste.
  7. Let rest 15 to 30 minutes before serving.
  8. Chill if desired for deeper flavor.

Notes

Draining tomatoes helps prevent watery salsa. Letting the salsa rest enhances flavor and balances acidity.
