- 1 1/2 lbs ripe tomatoes (Roma preferred)
- 1/2 medium onion
- 1 to 2 jalapeños (optional serrano)
- 2 garlic cloves
- 1/2 cup fresh cilantro
- 2 tablespoons lime juice
- 3/4 teaspoon kosher salt
- 1/4 teaspoon cumin (optional)
- 1 to 2 teaspoons sugar (optional)
Instructions
- Chop tomatoes and drain 10 minutes if very juicy.
- Add onion, jalapeños, garlic, and cilantro to a food processor.
- Pulse until finely chopped.
- Add chopped tomatoes and pulse until mixture is scoopable.
- Transfer to a bowl and stir in lime juice and kosher salt.
- Add cumin or sugar if using and adjust seasoning to taste.
- Let rest 15 to 30 minutes before serving.
- Chill if desired for deeper flavor.
Notes
Draining tomatoes helps prevent watery salsa. Letting the salsa rest enhances flavor and balances acidity.
