- 1 cup grated carrots
- ¾ cup sugar
- ½ cup brown sugar
- 3 eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup cream cheese
- ½ cup butter
- 2 cups powdered sugar
Instructions
- Preheat oven to 180°C (350°F).
- Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Whisk eggs, sugar, brown sugar, oil, and vanilla extract.
- Stir grated carrots into the wet mixture.
- Fold dry ingredients into the wet mixture until combined.
- Grease and line a cake pan.
- Pour batter into the pan and bake for 35–40 minutes.
- Allow cake to cool completely.
- Mix cream cheese, butter, and powdered sugar, then spread frosting over the cooled cake.
Notes
For extra texture, add chopped nuts or raisins. Always frost once the cake is completely cool.
