- 1 lb chicken
- 2 cans white beans
- 1 can diced green chiles
- 3 cups chicken broth
- 1 onion
- 4 oz cream cheese or 1/2 cup sour cream
- 1 tbsp cumin
- 1 tsp chili powder
- 1/2 tsp oregano
- Salt
- Pepper
Instructions
- Sauté onion until translucent.
- Add garlic and spices and cook briefly.
- Pour in broth and green chiles.
- Mash some beans and add back to pot.
- Add remaining beans and chicken.
- Simmer for 10–15 minutes.
- Stir in cream cheese or sour cream.
- Add lime juice and serve.
Notes
Mashing part of the beans creates a naturally thick and creamy texture without needing extra flour or starch.
