Description

Ingredients

Scale
  • 1 lb chicken thighs
  • 2 carrots
  • 2 celery stalks
  • 1 onion
  • 3 cloves garlic
  • 2 bay leaves
  • 1 tsp fresh thyme
  • 8 cups chicken stock
  • 2 cups egg noodles
  • Fresh parsley
  • Lemon juice
  • Salt
  • Black pepper

Instructions

  1. Season and sear chicken thighs until golden.
  2. Remove chicken and sauté onion, carrots, and celery.
  3. Add garlic and thyme and cook briefly.
  4. Return chicken and add stock and bay leaves.
  5. Simmer for 25 minutes.
  6. Remove chicken, shred meat, and discard bones.
  7. Add noodles and cook until tender.
  8. Return chicken to pot and stir.
  9. Finish with parsley and lemon juice.

Notes
