Ingredients

- 1 lb chicken thighs
- 2 carrots
- 2 celery stalks
- 1 onion
- 3 cloves garlic
- 2 bay leaves
- 1 tsp fresh thyme
- 8 cups chicken stock
- 2 cups egg noodles
- Fresh parsley
- Lemon juice
- Salt
- Black pepper
Instructions
- Season and sear chicken thighs until golden.
- Remove chicken and sauté onion, carrots, and celery.
- Add garlic and thyme and cook briefly.
- Return chicken and add stock and bay leaves.
- Simmer for 25 minutes.
- Remove chicken, shred meat, and discard bones.
- Add noodles and cook until tender.
- Return chicken to pot and stir.
- Finish with parsley and lemon juice.
Notes
A squeeze of lemon at the end enhances the flavor and balances the richness of the broth.
