Scale
- 200g fresh strawberries or mixed berries (strawberries, raspberries, and redcurrants)
- 150g fresh or frozen blueberries
- 120g granulated sugar, divided
- 2 tbsp fresh lemon juice
- 200ml heavy cream (minimum 30% fat)
- 150ml whole milk
- 1 tsp premium vanilla extract
Instructions
- Wash and hull the strawberries if using fresh berries.
- Add the strawberries, blueberries, lemon juice, and 60g of sugar to a blender.
- Blend until completely smooth and glossy.
- Taste and adjust sweetness if needed.
- Transfer the berry purée to the refrigerator to chill.
- In a large mixing bowl, combine the heavy cream, whole milk, vanilla extract, and remaining 60g sugar.
- Whisk until the sugar is fully dissolved.
- Pour the chilled berry purée into the dairy mixture.
- Stir gently until fully combined into a smooth pink mixture.
- If using an ice cream maker, churn for 25 to 30 minutes until thick and creamy.
- For the no-churn method, pour the mixture into a shallow airtight container.
- Freeze and stir vigorously every 30 to 45 minutes for the first 3 to 4 hours.
- Continue until the texture becomes smooth and creamy.
- Freeze undisturbed for at least 2 additional hours before serving.
- Scoop and enjoy.
Notes
Using ripe, flavorful berries creates the best color and taste. Regular stirring during the no-churn process helps minimize ice crystals and creates a smoother, creamier texture.
