Description

This Masterclass Berry Delight Ice Cream is bursting with the fresh flavors of strawberries, blueberries, and berries blended into a creamy vanilla-infused base. Smooth, fruity, and naturally vibrant, it’s the perfect homemade frozen dessert for warm days.


Ingredients

Scale
  • 200g fresh strawberries or mixed berries (strawberries, raspberries, and redcurrants)
  • 150g fresh or frozen blueberries
  • 120g granulated sugar, divided
  • 2 tbsp fresh lemon juice
  • 200ml heavy cream (minimum 30% fat)
  • 150ml whole milk
  • 1 tsp premium vanilla extract

Instructions

  1. Wash and hull the strawberries if using fresh berries.
  2. Add the strawberries, blueberries, lemon juice, and 60g of sugar to a blender.
  3. Blend until completely smooth and glossy.
  4. Taste and adjust sweetness if needed.
  5. Transfer the berry purée to the refrigerator to chill.
  6. In a large mixing bowl, combine the heavy cream, whole milk, vanilla extract, and remaining 60g sugar.
  7. Whisk until the sugar is fully dissolved.
  8. Pour the chilled berry purée into the dairy mixture.
  9. Stir gently until fully combined into a smooth pink mixture.
  10. If using an ice cream maker, churn for 25 to 30 minutes until thick and creamy.
  11. For the no-churn method, pour the mixture into a shallow airtight container.
  12. Freeze and stir vigorously every 30 to 45 minutes for the first 3 to 4 hours.
  13. Continue until the texture becomes smooth and creamy.
  14. Freeze undisturbed for at least 2 additional hours before serving.
  15. Scoop and enjoy.

Notes

Using ripe, flavorful berries creates the best color and taste. Regular stirring during the no-churn process helps minimize ice crystals and creates a smoother, creamier texture.
