Description

A rich and creamy banana cheesecake baked over a cinnamon graham cracker crust and finished with fluffy whipped cream and fresh banana slices. The perfect dessert for banana lovers.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon
  • 5 tbsp unsalted butter, melted
  • 24 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 tbsp cornstarch
  • 3 ripe bananas, mashed
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 3 large eggs
  • ¼ cup heavy cream
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Fresh banana slices for garnish

Instructions

  1. Preheat oven to 165°C (325°F).
  2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter until combined.
  3. Press mixture into the bottom and slightly up the sides of a 9-inch springform pan.
  4. Bake the crust for 10 minutes and allow it to cool completely.
  5. Mash bananas with lemon juice until smooth.
  6. Beat cream cheese, sugar, and cornstarch until smooth and creamy.
  7. Mix in the mashed bananas and vanilla extract.
  8. Add eggs one at a time, mixing on low speed just until incorporated.
  9. Stir in the heavy cream.
  10. Pour the filling into the cooled crust.
  11. Wrap the springform pan in foil and place it in a roasting pan.
  12. Add boiling water halfway up the sides of the springform pan.
  13. Bake for 55 to 65 minutes until the edges are set and the center slightly wobbles.
  14. Turn off the oven, crack the door open, and cool the cheesecake inside for 1 hour.
  15. Refrigerate for at least 6 hours or overnight.
  16. Whip the heavy cream with powdered sugar until stiff peaks form.
  17. Top the chilled cheesecake with whipped cream and fresh banana slices before serving.

Notes

Use very ripe bananas for maximum flavor and sweetness. Cooling the cheesecake slowly helps prevent cracks and creates a silky texture.
