This easy banana bread recipe is ultra-moist, rich in banana flavor, and totally foolproof – the best way to use ripe bananas!

- 3 ripe bananas (mashed)
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar (packed)
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- In a large mixing bowl, mash bananas with a fork until smooth. Add melted butter, sugar, eggs, sour cream, and vanilla. Whisk until combined.
- Sprinkle flour, baking soda, salt, and cinnamon over the wet mixture. Gently fold until just combined (don’t overmix!).
- If using nuts or chocolate chips, fold them in now.
- Pour batter into prepared pan. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Let bread sit in pan for 10 minutes, then remove to wire rack. Cool completely before slicing.
Notes
This banana bread freezes beautifully and stays moist for days. Great for breakfast or a sweet snack!
