Instructions
- Preheat oven: 350°F (175°C). Grease and flour a Bundt pan or 9×13-inch baking dish.
- Mix dry ingredients: Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, whisk oil, honey, eggs, vanilla, and applesauce until smooth.
- Fold together: Add dry ingredients to wet. Stir just until combined. Fold in diced apples and optional raisins or nuts.
- Bake: Pour batter into prepared pan. Bake 40–50 minutes, until golden brown and toothpick inserted comes out clean.
- Cool: Let rest in pan 10 minutes, then transfer to wire rack.
Notes
This cake keeps well for several days and tastes even better the next day. Dust with powdered sugar or drizzle with a simple glaze for extra sweetness.
