Description

These Masterclass 15-Minute Garlic Sesame Noodles are packed with bold garlic flavor and coated in a glossy sesame soy sauce. Ready in just 15 minutes, they’re perfect as a quick weeknight meal or an easy side dish.


Ingredients

  • 200g dried noodles (ramen, udon, hokkien, or spaghetti)
  • 1 tbsp neutral oil
  • 4 cloves garlic, finely minced
  • 2 green onions, thinly sliced (whites and greens separated)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp dark soy sauce
  • 1.5 tbsp toasted sesame oil
  • 1 tbsp brown sugar or honey
  • 1 tsp rice vinegar
  • 1 tsp chili crisp or sriracha (optional)

Instructions

  1. Bring a large pot of water to a boil and cook the noodles according to the package instructions until al dente.
  2. Reserve 1/4 cup of the starchy noodle cooking water before draining.
  3. Drain the noodles and briefly rinse under cool water.
  4. In a small bowl, whisk together the soy sauce, dark soy sauce, sesame oil, brown sugar, rice vinegar, and optional chili crisp until smooth.
  5. Heat the neutral oil in a large skillet or wok over medium-low heat.
  6. Add the minced garlic and the white parts of the green onions and cook for 2 to 3 minutes until fragrant.
  7. Pour the prepared sauce into the skillet and simmer for 30 seconds.
  8. Add the cooked noodles along with 2 tablespoons of the reserved noodle water.
  9. Toss continuously over medium heat for 1 to 2 minutes until the sauce becomes glossy and coats the noodles evenly.
  10. Stir in the green onion tops and serve immediately.

Notes

Reserve the starchy noodle water to help create a silky sauce that clings perfectly to the noodles. Avoid browning the garlic to maintain its sweet flavor. Garnish with sesame seeds or extra green onions if desired.
