- ½ cup chopped spinach
- ½ cup diced bell peppers (any color)
- ¼ cup chopped onions
- ¼ cup grated zucchini (squeeze excess water)
- ¼ cup halved cherry tomatoes
- ¼ cup shredded cheddar or mozzarella cheese (optional)
- 1 tablespoon olive oil
- Optional herbs: basil, parsley, or Italian seasoning
Instructions
- Finely chop all vegetables so they cook evenly. Optionally, sauté them in olive oil for 2–3 minutes to soften — this enhances flavor and prevents excess moisture.
- In a large bowl, whisk together eggs, milk, salt, and pepper until smooth and frothy. Stir in cheese and the cooked veggies.
- Lightly grease an air fryer-safe baking dish, cake pan, or silicone mold with nonstick spray or parchment paper. Pour in the egg mixture and spread evenly.
- Place the dish into your air fryer basket. Cook at 320°F (160°C) for 12–15 minutes, or until the frittata is firm in the center and slightly golden on top. Insert a toothpick — it should come out clean.
- Let it cool 2–3 minutes before slicing. Garnish with fresh herbs or a sprinkle of extra cheese and enjoy your warm, fluffy veggie frittata!
Notes
You can mix and match your favorite vegetables — try mushrooms, broccoli, or even diced sweet potatoes for variation. Great served warm or cold!
