Ingredients

  • 6 large eggs
  • ¼ cup milk (or cream for a richer texture)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chopped spinach
  • ½ cup diced bell peppers (any color)
  • ¼ cup chopped onions
  • ¼ cup grated zucchini (squeeze excess water)
  • ¼ cup halved cherry tomatoes
  • ¼ cup shredded cheddar or mozzarella cheese (optional)
  • 1 tablespoon olive oil
  • Optional herbs: basil, parsley, or Italian seasoning

Instructions

  1. Finely chop all vegetables so they cook evenly. Optionally, sauté them in olive oil for 2–3 minutes to soften — this enhances flavor and prevents excess moisture.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper until smooth and frothy. Stir in cheese and the cooked veggies.
  3. Lightly grease an air fryer-safe baking dish, cake pan, or silicone mold with nonstick spray or parchment paper. Pour in the egg mixture and spread evenly.
  4. Place the dish into your air fryer basket. Cook at 320°F (160°C) for 12–15 minutes, or until the frittata is firm in the center and slightly golden on top. Insert a toothpick — it should come out clean.
  5. Let it cool 2–3 minutes before slicing. Garnish with fresh herbs or a sprinkle of extra cheese and enjoy your warm, fluffy veggie frittata!

Notes

You can mix and match your favorite vegetables — try mushrooms, broccoli, or even diced sweet potatoes for variation. Great served warm or cold!
