Description
A fluffy, protein-packed frittata made right in the air fryer, loaded with fresh veggies and melty cheese — perfect for breakfast, brunch, or meal prep.
Ingredients
Scale
- 6 large eggs
- ¼ cup milk or heavy cream
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup chopped spinach
- ½ cup diced bell peppers (any color)
- ¼ cup diced onions
- ¼ cup shredded zucchini (optional)
- ¼ cup cherry tomatoes, halved
- ¼ cup grated cheddar or mozzarella cheese
- 1 tablespoon olive oil
- Optional: pinch of paprika, garlic powder, or Italian seasoning
Instructions
- Chop your vegetables into small, even pieces. Lightly sauté them in a skillet with olive oil for 2–3 minutes to soften and release flavor.
- In a medium bowl, whisk together eggs, milk, salt, and pepper. Add in your cheese and cooked vegetables. Stir gently to combine.
- Lightly grease an air fryer-safe cake pan, baking dish, or silicone mold. Pour in the egg and veggie mixture, spreading evenly.
- Place the pan in your air fryer basket. Cook at 320°F (160°C) for 12–15 minutes, or until the eggs are set and the top is golden. Insert a toothpick — if it comes out clean, your frittata is ready!
- Let the frittata cool for 2–3 minutes before slicing. Serve warm, garnished with herbs or extra cheese.
Notes
You can customize your frittata with your favorite vegetables or proteins — try mushrooms, ham, or feta for variety.
